Additional Information & Description

Fresh tagliatelle, ricotta-filled ravioli and tiramisù are the focus of this four-hour cooking class at a Tuscan trattoria in Florence. Work with a professional chef in a small group, learning to prepare an Italian meal from scratch rather than simply watching a demonstration.

Work the dough and cook the sauces

Put on your apron and begin with traditional sauces, including ragù and tomato sauce. Then combine eggs and flour for fresh pasta dough and knead it by hand. The class takes you through rolling, cutting and filling, giving you practice with two different pasta shapes: long ribbons and filled parcels. You handle the dough yourself, following the preparation from basic ingredients through to the shapes that will become your meal.

Prepare dessert and pause for Tuscan appetizers

While the sauces cook, turn to dessert, with particular attention to making a smooth mascarpone cream. This part of the class brings a different technique to the kitchen alongside the dough work and sauce preparation. A short break with Tuscan appetizers separates the early cooking stages from shaping the pasta, so the session includes time to pause before returning to the worktop.

Visit Sant’Ambrogio Market with the chef

The 9 AM class includes a visit to Sant’Ambrogio Market, except on Sundays. Join the chef to pick fresh local ingredients before heading into the kitchen. Among the stalls, you’ll see fruit, vegetables, meats and cheeses—a look at the ingredients on sale as part of the morning’s cooking activity. This market visit applies specifically to that morning session and does not take place on Sundays.

Sit down to the dishes you made

The class finishes with lunch or dinner, depending on the time you select. Eat the dishes you have prepared, accompanied by local wine; unlimited wine is included. You also receive a participation certificate. Tips are not included.
